Vegetarian (Filling) Caesar Salad
Wait! Before you read on, have you checked out my vegetarian Caesar dressing recipe yet? It's kind of a must for this salad. :)
By adding things like Kale and pumpkin seeds, we can turn a semi-healthy Caesar salad into a nutrition and filling out! Here's how I do it:
What you need:
2 cups shredded kale
2 cups shredded romaine lettuce
2 small (or 1 large) carrot, grated
1/2 cup pumpkin seeds
2 slices whole-wheat bread cubed
1 tbsp olive oil
1/2 garlic powder (or to taste)
1/2 tsp salt (or to taste)
The Green Mum Caesar salad dressing
shaved Parmesan cheese
lemon wedge for garnish
What you do:
1. Add the kale, romaine, carrot, and pumpkin seeds to a large salad bowl.
2. Drizzle cubed bread with olive oil, and mix with garlic powder and salt.
3. Bake the bread at about 350 F for 15 minutes. Watch to prevent burning! You've got some gooood croutons now.
4. Add the croutons, dressing, cheese, and lemon to salad and you are good to go!
