Homemade Hummus (Easy!)
This is a really easy recipe that can save you money and plastic. It tastes good and keeps for a while. I commonly send this hummus to school for my daughter's lunch accompanied with some cut up carrots or cucumber. This hummus is very basic, or classic. So feel free to dressed it up with some sun-dried tomatoes, some beet puree, or some hot sauce! Yum!
What you need:
1/2 cup dried, raw chickpeas
1 clove garlic, roughly chopped
3 tbsp olive oil
2 tbsp tahini
2 tbsp lemon juice
1/4 tsp salt
Some water (amount depends on desired consistency)
What you do:
1. Soak and cook chickpeas until they are soft. (I soak them over night and cook them in a pressure cooker).
2. Add all of the ingredients until the salt to a food processor and blend until smooth.
3. Add 1 tbsp of water at a time to hummus until you get the desired consistency. We like our smooth and creamy!
